Perfect Summer Salad with Chickpea Burgers!

When my friend and I decided to cook dinner in one night a few weeks ago we decided on trying out a recipe for chickpea burgers. I thought a little summer salad would be a good side, so I came up with this mixture of ingredients to highlight some of the fresh basil from my porch! It was a great refreshing salad to put together but it's best served soon after you make it - so don't make too far in advance.


Tomato Basil Corn Salad
1/2 TB white wine vinegar
1 TB olive oil
salt and pepper
1 ear of corn (cut off, not cooked)
2-3 tomatoes
1/2 tsp chopped garlic
2 TB green pepper, chopped
lots of fresh basil!

Cut off the corn from the cob
Chop all of your ingredients and mix together, adding the basil last.
The recipe for chickpea burgers was one my friend had tried before, and they were also easy since you just throw everything in a food processor or blender!

Rather than making tahini ourselves we bought the premade Tahini that Trader Joe's makes - and it was perfect! Would definitely recommend it.
Once the mixture is pureed, you just form into 4 patties, patting down a bit to make sure they stick together while in the pan.
Make sure your pan isn't too hot - you don't want your patties to burn. Also don't put too much olive oil in your pan - you're not trying to fry them!
We wrapped our chickpea burgers in whole wheat pitas, with the tahini sauce, tomatoes and lettuce. Even if you're not vegetarian you'll like this meal!
